The Mahi-mahi – also known as Dolphinfish - inhabits tropical and warm temperate waters worldwide. It is a fast growing fish, able to attain weights of more than 20lb within its first year and sexual maturity within 6 months. The electric blues and greens of the Mahi-mahi fade soon after death.
